Quick and Easy School Breakfast
School Breakfast is so important!! There have been so many studies on how important it is for kids to eat breakfast in the morning before school. It helps them stay focused and learn more. Now am I going to try and tell you that I don’t phone it on breakfast pretty regularly…. no! By that I mean that my kids have a bowl of cereal at least twice a week! But when I can do make ahead or easy breakfast I do! It makes this mama’s heart feel good knowing I sent my littles out into the world with a full belly! But let’s be real it’s not going to happen every morning, but I did find some easy recipes to help you try to get at least a couple in a week. Here is hands down my son’s favorite breakfast! The good old American breakfast sandwich. Now my son loves the Sausage egg McMuffin from McDonalds, but I don’t really love him eating it lol! So I like to make my own version here at home. The Best part is I make these ahead of time and freeze them! Here are the ingredients you’ll need:
- English Muffins
- Deli Meat we prefer ham
- American Cheese Slices
- Eggs
- Muffin pan or ramekins
- Spray muffin tin or ramekin with non stick spray
- Crack your eggs into a muffin pan or ramekin. I actually prefer to use ramekins. The muffin pan is fine but makes the eggs a little smaller, I find with the ramekin the egg is the perfect size. Just make sure if you do use a ramekin that it is oven safe.
- Salt and pepper to taste
- Put in oven at 350 degrees
- Cook 10-15 minutes or until egg is fully cooked
- While those cook, slice the English muffins
- Once the eggs are done, let them cool. If you are eating the sandwiches right away you don’t need to let them cool, but if you’re freezing them you need to let them cool so the egg doesn’t melt the cheese.
- Place three pieces of deli meat on one side of the English muffin
- Layer the egg on the meat
- Layer cheese on egg
- Place Top piece of English muffin on top
- Wrap in plastic wrap and freeze or place in fridge
- I like to wrap mine in plastic wrap and then a freezer bag and place in freezer
- To re heat you can place them in the oven or microwave These are so yummy!! If you make them to eat right away then you will need to toast the English muffin in a toaster or in the oven so they are nice and crispy! This is really the only breakfast my son ask for!This next breakfast is another oldie but goodie. It’s the classic Breakfast Casserole. This is a breakfast that you can make ahead of time too which is a win in my book! Here are the ingredients:
- 6 Eggs
- 1 cup Shredded Cheese
- Pilsbury Grands Crescents
- 1 and half cups Shredded Hash Browns
- You can also add Bacon and Green or red bell peppers
- Spray non stick cooking spray to 8×8 pan
- Line pan with Pillsbury Crescent rolls
- Beat eggs
- Add shredded cheese to eggs
- Add hash browns to egg mixture
- Add bacon or bell peppers if using
- Stir until combined
- Pour mixture over crescent rolls in pan
- I like to layer the top with more cheese and hash browns
- Bake for 40-45 minutes at 350 degrees or until cooked and golden brown
- Remove from oven and let coolYou can slice them in to squares and eat right away. I like to make this the night before and keep it in the fridge and reheat in the morning in the microwave. I will also freeze the individual squares in the freezer and take out as needed. It’s a nice hearty breakfast.Here is a fun, yummy and easy make ahead breakfast. One of my personal favorites. It is overnight oats. This is so easy to make and you can customize it to your own taste. Here is what I used to make it:
- 4 mason jars with lids
- 1/2 cup Oats
- 1/2 cup vanilla or flavored yogurt
- 1 TBSP Flaxseed
- 1 TBSP brown sugar
- 4 strawberries diced
- Handful of blueberries
- 1/2 cup milk or almond milk
- Add oats
- Add Yogurt
- Add flaxseed
- Add brown sugar
- Add strawberries
- Add blueberries
- Add milk or almond milk
- Put lid on mason jar and close tightly
- Shake until will combined and you no longer see layers. Enlist the help of your kids they love this!
- Refrigerate over night
It’s a shake party!!!Let the kids pick their fruit and yogurt. They are more likely to eat it if they helped make it. You could even throw in a little chocolate chips to make it extra yummy!This is such a quick and easy healthy breakfast. I eat this more than the kids do, because let’s face it moms and dads are always the last to eat in the morning, and usually have no time! So this is something you can eat in the car on the way to school!I was at Wal-Mart the other day and found this Wilton Silicone Candy Mold and thought it could be perfect to freeze oatmeal. My girls love having oatmeal in the morning but I don’t always have time to make it for them. So I figured if I could make it ahead of time that would work! Plus this is a better and cheaper option than oatmeal packets. I made a batch of oatmeal and poured them into the slots. Then I placed the mold into the freezer. It took about 2-2.5 hours to freeze. Once they were frozen I took them out of the mold. I wrapped them each in plastic wrap and placed them in a freezer bag. All you need to do in the morning is pull out the oatmeal cube place in bowl, pour a little milk on it and microwave until heated. Super easy and my kids love it! Warning this is a chocolate filled breakfast so if your kiddo doesn’t handle sugar well do not give them this in the morning before school! But it is a super yummy breakfast, not one I recommend having often lol! I like to use this breakfast as a reward. So if the kids are behaving or got ready for school with no fighting, then I will sometimes reward them with these breakfast quesadillas. Here’s what you need: - Whole Wheat or flour tortillas
- Peanut Butter
- Banana
- Chocolate chips or Nutella
- Cinnamon
- Sugar (optional)
- Spread Peanut Butter on one half of the tortilla
- Slice Banana and add slices on top of Peanut Butter
- Add about tablespoon of chocolate chips on top
- Sprinkle with cinnamon and sugar (optional)
- Fold Tortilla in half
- Heat frying pan with butter
- Cook Quesadilla until chocolate is melted and crispy on the outside This is a very sweet breakfast. Like I said before this is not a weekly breakfast, but I wanted to include it because it is very quick and easy to make, and your kids will love it!
