Frozen Lemonade

Perfect summer drink to cool you off!

Ingredients
  

  • 1/3 cup  pure honey
  • 1/4 cup warm water
  • 3-4 cups  ice cubes
  • 13.5 ounce can light coconut milk well chilled
  • 1/3 cup lemon juice (2-3 lemons)
  • 1 tbsp lemon zest (1 lemon)
  • 1/2 tsp vanilla extract
  • Optional garnish: fresh lemon slices, fresh mint, maraschino cherries

Instructions
 

  • Stir honey in warm water (under 110 degrees) to dissolve. Once dissolved, pour into a blender.
  • Add in ice cubes, coconut milk, lemon juice, lemon zest, vanilla extract to the blender.
  • Blend until frothy and semi-slushy. (If it’s hard for your blender to handle, put in part of the ice cubes at a time).
  • Garnish with lemon slices, fresh mint, or maraschino cherries (optional) and serve.

Notes

  • When stirring your honey in with the warm water, you want to be careful to keep the temperature under 110 degrees, to preserve the health benefits of the honey!
  • Add in more or less ice cubes until you reach your desired consistency.
