Peppermint Bark
Hello and welcome to the blog! Tis the season for yummy treats. I have been making Peppermint Bark since I was a teenager. It has become a yearly tradition. It makes great gifts too!
First thing you start with are candy canes. I use a box of 12 for one batch. You’ll also need a 22 OZ bag of Ghirardelli White Chocolate chips, or two 12 OZ bags. Now I have tried a lot of different white chocolate over the years, and trust me, Ghirardelli is the best!!
Once you open the candy canes, place them in a large closable baggie. Then place another baggie over it. It’s important to double bag the candy canes, since you will be hitting and smashing them in the next step. Again, trust me, you want to double bag! I tried without doing it, and it was a mess.
Now that the candy canes are double bagged, you’ll need to start smashing! This is a great time to take out some frustration lol! You can use the bottom of a cup to break the candy canes or meat pulverizer. Hit the candy canes until they are small pieces.

Next, you need to sift the broken up peppermint pieces. Again, you don’t want to skip this step! I have tried to skip it before, and the bark was way too pepperminty!

Grab a baking sheet and line it with parchment paper or wax paper would work too.
Now you need to melt the chocolate! Use a double boiler and add the chocolate in small patches. Make sure to stir constantly so the chocolate doesn’t burn. Once you melted all the chocolate, remove from the heat. You can add some peppermint pieces at this stage if wants, I usually wait.
Spread the melted chocolate onto the parchment paper. You want the chocolate evenly spread out and not too thick and not too thin.
Add the peppermint pieces to the top of the chocolate while it’s still warm. Push the peppermint down into the chocolate. Let completely cool and harden.
After the chocolate is completely hardened, Start breaking it up into pieces.
Place the Peppermint Bark in a sealed container, baggie or saran wrap.
I like to put the Peppermint Bark in saran wrap, then wrap it with a dish towel or four sack. It looks so cute and the recipient can use it!
